I was curious about a particular kind of <em>yakitori<\/em> in a case, so I grabbed a quick photo of it so that I could translate the name later, out of the bustle of the crowds.<\/p>\n<p><a href=\"http:\/\/studionebula.com\/blog\/wp-content\/uploads\/2013\/04\/2013-04-02-10.52.06.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-2102\" alt=\"2013-04-02 10.52.06\" src=\"http:\/\/studionebula.com\/blog\/wp-content\/uploads\/2013\/04\/2013-04-02-10.52.06-764x1024.jpg\" width=\"680\" height=\"911\" srcset=\"https:\/\/studionebula.com\/blog\/wp-content\/uploads\/2013\/04\/2013-04-02-10.52.06-764x1024.jpg 764w, https:\/\/studionebula.com\/blog\/wp-content\/uploads\/2013\/04\/2013-04-02-10.52.06-224x300.jpg 224w, https:\/\/studionebula.com\/blog\/wp-content\/uploads\/2013\/04\/2013-04-02-10.52.06.jpg 1936w\" sizes=\"auto, (max-width: 680px) 100vw, 680px\" \/><\/a>In the foreground it&#8217;s been cooked with <em>tare<\/em>, which is basically what we call teriyaki in the US (a term that&#8217;s almost never used in Japan, although I saw it on a menu for a Subway sandwich shop once); in the background it&#8217;s plain, cooked with just some salt. Looks pretty good, eh? It turns out that the name is\u00a0<i>nankotsu<\/i>\u00a0(????) which means cartilage.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Local cuisine is, of course, an ongoing discovery.
